Rustic Gluten Free Pigs in a Blanket

My son always wants the hot hors d'oeuvres that are passed around at Holidays. I made him this version of pigs in a blanket. They are a little bit crunchier than the original version but they are mighty tasty and quick and easy.


Recipe:

1/2 Package of Gluten Free Bisquick
2 Hot dogs of your choice
1 Teaspoon garlic powder
Shredded cheese of your choice (optional)
1/2 Cup of water or enough to get a thicker batter consistency

Preheat the oven to 425 degrees. In a medium bowl, mix the GF bisquick, the garlic powder and the water. Mix well, leaving the batter on the thicker side.

Cut the hot dogs into bite sized pieces. Using a large spoon, scoop a spoonful of the batter and wedge the hot dog piece into the middle. Place it on a baking sheet and gently cover the rest of the hot dog piece with the batter. The batter is very sticky and will require patience  :)  If you are adding cheese, simply put a small amount on the top of each hot dog biscuit mound

Cook for 8- 12 minutes, or until the dough is slightly browned. Let cool slightly before eating.
