It has been a bit of a rollercoaster with so many dips and turns. I have learned multiple life lessons and I have found out so much about myself and the people in my life. My <a href="https://allergyphoods.blogspot.com/2023/11/hurry-up-and-wait.html" target="_blank">last post</a> shared about how life was telling me that it was just time to slow down, even if I wasn't ready to. I went through a pandemic, I watched my family become something new and different, I saw myself grow into the person that I am supposed to be and I realized how precious time is. I don't waste an ounce of it now. To some who don't really know me, my behaviors may seem a bit forward? selfish? childish? over the top at times? But what life has taught me is that it is not my business to care what other people think of me, only to make sure that I stand my ground and do what I feel is necessary. It took me 48 years to realize that I don't have to mold myself into what I am told that I should be. I am embracing it fully. </p><p>This past holiday, my boyfriend's mother sent me a gift- a beautiful snowflake ornament. She has been so kind and accepting of both me and my daughter. Her gift is part of an annual tradition that she also has with her son (his is a different item). Upon opening it, I tool a deep breath and sat back. During my previous marriage, we always received a yearly Lenox snowflake... 20 years of snowflakes that I had just unloaded was followed by another snowflake. What once tarnished such a beautiful thing of nature is now a symbol of renewed beauty of life. Not just a beige snowflake- a silvery, sparkly, magical snowflake. And just as each snowflake is unique, so is this time in my life. Very few people can say that they have found their true love, their soul mate - someone that loves you right down to your core. I thought I had found who I was as <a href="https://allergyphoods.com/" target="_blank">Nutrimom</a>. I was so very happy nourishing my son and helping all of those within the food allergy community, meeting so many amazing people and learning about foods and how to use them in different ways. I was proud to be the mother to my children and advocate for my son's rights and health. But now, even though I never thought it could possibly get better, life has somehow expanded into immense love and beauty. So this new snowflake- this is a symbol of all that is good, kind and loving. My sign that it is necessary to be unique. It's my time to shine and every single day, I will share my inner light along with the glitter that I wear every single day (because I can).<p></p><p><b><span style="color: #800180;">The Universe Listens</span> </b>The Universe NOT Siri (lol). I understand that everyone has different beliefs on how life shows them things. Years ago, when my life was admittedly a place of unhappiness, I wrote down the things that I needed my life to become. The list was not long, it was not (in my opinion) anything greedy but it was a private wish between myself and the Universe to make my world a place that I could be calm. I tucked this list into one of my cookbooks and forgot about it. Flash forward a few years while unpacking at my boyfriend's house, I found the list just as I had left it inside that cookbook- safe and waiting for me to realize that what I had asked for was granted to me. I have known Kyle Dine for many years and I was beyond thrilled when this position opened up. Not only am I still able to help people within the food allergy community (a combo of my 3rd wish <b><i>"<span style="color: #800180;">I will continue to help others</span>"</i></b> ) but I work from home and the entire Equal Eats Team is just amazing to be a part of! Such a good vibe with a good mission.</p><p><b><i>"<span style="color: #800180;">I will continue to create</span>"</i></b> while this part of my life has changed, I still do! I am not as active working with products and recipes but in all honesty, I am at a different stage in my life now. I was once part of that eager blogger crowd whereas now, I post and write when I want too. No more deadlines, no more pressure to increase social media numbers- just enjoying everything that I do. Stopping to smell the roses (and eat the food) instead of just taking photos of it. </p><p><b><i>"<span style="color: #800180;">Things that hold me back will be removed</span>"</i></b> Anyone who has follows me as Nutrimom knows exactly what this refers to... I will share the <a href="https://allergyphoods.blogspot.com/2021/02/my-name-is-tracy-and-i-am-divorced-food.html" target="_blank">article link</a> but I will not give anymore energy to that portion of my life that I have shed.</p><p><b><i>"<span style="color: #800180;">I will surprise myself as well as others</span>"</i></b> I always knew that I am strong but I never knew just how much. I have stepped outside of myself and just watched everything as it happened. Almost like I watched a movie about my life and was constantly rooting for me from the tv screen. Watching, with popcorn in hand (and maybe wine and chocolate) hoping that I would make the right decisions, say and do the right things and not crumble. And for the times that I thought I had been knocked down into less than, my energy instead renewed and I rose up each time with even more of what I should be. Each season seemed to have ups and downs but in the end, it was the happiest ending ever. The best part is that it's not even the end, it's just the beginning. A life sequel, if you will. </p><p><b><i>"<span style="color: #800180;">I will gain freedom and stability</span>" </i></b>This, but to infinity. In every single way, on every level of my being I have reached this. I can breathe, I can feel life as it touches me, I can hold my head high and I can die tomorrow knowing that this was something that I have obtained. </p><p><b><i>"<span style="color: #800180;">I will be loved and supported</span>" </i></b>Anyone who follows me on social media knows that I am. Not only by friends and family that have had my back but also my ooey gooey over the top PDA with Sean says it all. There has not been one moment that has passed since I met him that I have not felt anything less than love. To be told that we have a true partnership, that we have each other no matter what happens and to be told that he is proud of me... words and actions are so simple to use but so very necessary. Those men that everyone says do not exist- they do. He does. If life threw me a curveball, I would allow myself small moments of silent pity parties but then I would get up and begin again. In my mind, I have no time to waste, ever. In my heart, I have too much to give not to love the right person. In my soul, I have just one life and I have zero patience to wait for anything... even the good things. Maybe it was my upbringing. Maybe it is a family trait (all of the women in my family are strong and stubborn and if you dare tell them they cannot, they will not only find a way to do it but it will make your head spin seeing it done so fast). For the most part, this is not a bad thing. This has gotten me through so many life experiences leaving me stronger while rising from the ashes to create a new fire. This works until life steps in and forces me to have to wait, even when I try to utilize that fierce independence. I will kick and scream and fight to try to do what I have to do. But sometimes, life is stronger and life wins.</p><p><b><span style="color: #cc0000;">Patience is a Virtue</span></b> You know what- whoever said this first was so full of shit. They probably also started the Live, Laugh, Love crap... The definition of virtue is "A trait of excellence, including traits that may be moral, social, or intellectual. The cultivation and refinement of virtue is held to be in "good of humanity" an thus is valued as an end purpose of life or a foundational principle of being." Why? People can be all of these things without patience. And while I do understand that some things take time or need to take more time, that does not help me feel like I am getting accomplished whatever I need to accomplish. If I can find away around being patient to get answers or things done, I will find it. I don't like being told no because I have always been taught to find a way. This may seem a bit intimidating to some but for me, self survival has always been the first line of defense and motivation. Not so much <i>this is what I wan</i>t but definitely more of <i>this is what needs to be done</i>. Not a huge deal, it happens but in the process of stopping my fall, my back was also pinched. Flashforward to me, the one who is go-go-go to a week flat on the floor with ice and heat while also only having one fully functioning hand....grumble, grumble. Laying on the floor, having conversations inside of my head about all of the things that I could and should be doing while life is like Nope (insert sweary emoji). Keep in mind it could be worse- people are starving, wars are going on, blah blah blah blah BLAHHHHHHHH. I am lucky enough to have an amazing boyfriend and daughter who are doing as much as I will let them do for me and a <br /> mother who checks in every day just to see if I need anything. So, yeah, I should just shut the eff up but like I said- inside of my head, conversations just continue to swirl. Couple that with emotional ups and downs and I am sure by now my boyfriend thinks I was the one who starred in The Exorcist. Put down your phone and actually see your world in real time again. Be proud of all of your accomplishments, even if the biggest one of the day was putting laundry away that took three times as long as it usually would. You begin to realize that it's ok to see dust in your house- it's just dust. Timing is never right for things like this. Let it happen. Watch and see what unravels next. If I didn't work from home for <a href="https://equaleats.com/" target="_blank">Equal Eats</a>, I would have no job right now (have I mentioned how much I love this job?!). If I didn't have the support and help that I have, I don't know how I would even be able to do the small things by myself (OMG... not being able to shave just one of my armpits.... annoying). And if I had not found this man who showed me it's ok to want to do everything and wants to do it together, I know that my heart would not be the same and neither would <br />my spirit (soooo mushy I know but I do so adore this man). <p></p><p>While I sit here, with my spiraling conversations to myself, I will try to remember to inhale and exhale to enjoy my breathe. I will try to remember how it feels to be taken care of and how grateful I am for that. One Year. I have been writing since I was very young- it's always been a passion of mine. Words flowing onto paper or otherwise because sometimes, life stifles your ability to speak the words that you need to share. So when I stopped writing, I was concerned. I thought a part of me had died, that I was losing something that I felt so deeply about. It is truly based on what thoughts race and bounce inside of my head. Beautiful, chaotic noise that makes sense to me. I used to wake up every day with a song blasting inside of my head. Sometimes, it was the same song for days or weeks. Sometimes it was different or sometimes, it was just part of a song. But always a song. That also stopped about a year ago until this morning. I had not one but three songs reverberating and for the first time in over a year, I wanted to write. Which songs? <a href="https://www.youtube.com/watch?v=iX_TFkut1PM" target="_blank">Bye, Bye Miss American Pie</a> (part of that song was used for a tv series years ago), <a href="https://www.youtube.com/watch?v=bUmKUWzbDxg" target="_blank">Where Have All the Cowboys Gone</a> and <a href="https://www.youtube.com/watch?v=XhzpxjuwZy0" target="_blank">Jump Around</a> (but just the lyrics Pack it up, pack it in, let me begin I came to win, battle me, that's a sin)... this odd mishmosh of songs blaring inside of my head on this beautiful, sunny morning. As I looked at my sleepy boyfriend, I just said "I need coffee and I need to write." The title popped into my head but I realized the meaning was not about death at all, but rebirth. </p><p>I have blogged since 2008- 15 years. I met so many amazing people in the food allergy world. So many were mothers, parents, advocates all with the same passion as I had- to help. We were the first group of food allergy bloggers and we slowly built a huge family that went beyond the US and included so many steps toward increased information to keep our family and everyone else's family safe(r). But I began to notice that after so many years, many of us had life changes. COVID, divorces, personal health issues and our food allergy children were no longer children but adults off living their own lives. After talking to so many others, the majority of us were left floating in an abyss. How do you reprogram your brain to find a new passion, a new mission when you are no longer the food allergy mom? Years of caring and dedication to make sure these little beings were safe suddenly stops. Maybe not stops but definitely changes. There are no more school field trips, no more yearly doctor visits to refill multiple life-saving medications just in case and those beings that were once so tiny, depending on you and your guardianship are all grown up. Still a mom but not <i>that</i> mom, just a mom. Just a wife or not a wife. Just a woman but unsure of what kind of woman. I thought I was lost. I thought I was not dealing with things, just pushing them aside. But it turns out, I needed this time for me. FOR ME. Imagine that. I am thankful that I realized that I needed this for me. I feel, that as a society, women are programmed from a very early age to be caregivers for everyone but themselves. We are taught that it is selfish to even consider self-care and if we do think about it, we should feel guilty. We are taught to be strong because often, we will need to be strong for others when they cannot be for themselves. And while I was more than willing to do that for my family, I did not take care of myself in the process. At the time, I didn't care. I put my family first and I would do it again. Then my world changed and while I was still strong, I didn't want to be <i>that</i> strong anymore. I wanted to be able to say I didn't want to be that strong without guilt. But with so much to figure out, I could not find my voice to say that until now.<p></p><p><br />Changes... so many changes. Nutrimom as a business is gone, my son is an adult, I saw my daughter also turn into an adult, I moved twice, I lost the only job that I could find during COVID when I was hurt at work and I had zero desire to write, share, advocate. Because I had to figure out me. I worried about what everyone else would think of me and my choices, how they would judge me. Until I realized that I don't require other people's opinions to be happy. Selfish- absolutely but now, I know it's necessary. With that realization came new things and a new life. A happy life, a calm life, a life that I feel like I am comfortable inside of my own skin and encouraged to be that way. I am watching my daughter blossom into an amazing woman who is funny and kind and so many things that I wish I had been at her age. Instead of waiting to be told what I should do, I decided what I should do. I eat too much, I take copious amounts of photos, I love my life incessantly, I wear clothes that are deemed unfit for a 50 year old woman, I love my larger curves and I do it without giving a crap of what other people think. I am inhaling my life fully. I am loving to the point of no return. I am dancing in the street. I am being me, completely. I am all or nothing. With almost no time, energy or enough paid opportunities, I had to make this difficult decision to end (or at least cut back) what has been such a large part of my life for such a long time. I have made so many amazing friends, associates, business connections and more through this journey that all began when my son was an infant. I have proudly watched the allergy-friendly food industry grow to help our community. I proudly fought for all of our allergic families during the EpiPen crisis. But now my son is an adult, doing his own thing and my life is just not that life anymore. I will always support the food allergy community just on a less active scale. I welcome anything in the area of writing, recipes, photos and more as I this has been a large part of what has always driven me, even as a young child. I welcome working for an organization that will allow me to help others in some capacity while helping me find a new mission as well. I had to take a step back. I had to figure out what was absolutely necessary during a HUGE shift in my life but I am so very proud of this shift. I was 30 pounds heavier and I watched as my family was torn apart, which included my allergic son staying with my ex husband (who took little to no interest in his allergy issues). This was THE most difficult decision of my life to make but it had to be done. When I asked NutriSon who he was staying with and he shared that it would not be me, I gulped back my tears and pride and told him that I support whatever his decision is. After all, NutriSon is (basically) an adult, his own being and as much I want to shelter him forever he has his entire life to see what he wants for himself. He was the purpose of me beginning Nutrimom and he will always be part of the purpose of why I live and breath, truly. But when food allergy moms are no longer the helicopter parent and begin to remember that they are more than just that mom, they begin to ask what is necessary to keep themselves alive and safe. And although my needs were not because of food allergies, I realized that self love and self safety are a must. They are not selfish. It is very important to remember who you are as your own person. You cannot be strong for others if you are not strong for yourself first. </p><p><b><span style="color: #6aa84f;">Then, Well, COVID happened</span></b> Like the rest of the entire world, my life imploded. I hoarded food, even extra safe foods for NutriSon in case he could not find any. I watched as my job as a Volunteer Manager disappeared and I panicked just a wee bit but we all did so no soapbox here. But it was truly eye-opening... a pandemic and as a food allergy mother, during this huge thing going on, I had little to no access to my son with food allergies. Yes, he is old enough to do what he needs to do to stay safe but with COVID numbers rising, people dying, food shortages... it added an awful, dark twist to life as a food allergy mother who already worried that she would some day get that phone call of "I'm calling about your son". My job crumpled, my clinical partnership crumbled, I sat in car lines for free boxes of food because I wasn't sure if I would need it or not and I melted into my new life of constant fear of not having food, not having money, getting sick and or dying and leaving my children which seemed to spill into every aspect of my everyday life for days, weeks, months... you all understand. So, although I desperately needed and wanted to write, merely surviving was my priority. </p><p><b><span style="color: #6aa84f;">Then Life Got Busy</span></b> I began a retail job working 6 days a week because that's all that I could find and I was/am grateful to have that. I tried to maintain Nutrimom because that little voice inside of me screamed <i>Don't give it up</i>. But tiredness set in and as much as my brain kept telling me to reinvent myself, fatigue stomped everything into dust not allowing me to do anything but maintain on a daily basis. And I was still grateful for that. Some people were not able to do that. Some people had no home, no safe foods...some people died. So, I was grateful. I am not a religious person per say but I do believe there is something there that has our back. I believe that asking for help is not a weakness and is acceptable as long as it is not overused and abused. When I finally broke down and "asked for help" asked for a sign on what to do next I received an email from <a href="https://www.mendhunger.org/" target="_blank">Mend Hunger</a> asking if I would be a part of their team as Account Manager. Again, I was grateful and still am! I have known this organization since ... I truly don't know when and to watch how they have become what they are today and ask to be a part of it humbles me. I want to help, I need to help so this helped me exhale a bit as well. This was followed by an offer to become a staff member of <a href="https://www.menutrinfo.com/" target="_blank">MenuTrinfo</a> for Social Media and Marketing- a company that is also based around helping keep people with food allergies safe. It is an outlet, it gives me a voice and if you are a subscriber, you have noticed that my blog articles have thinned out compared to how much I used to write. </p><p>When I am lacking in my life, I ask the Universe for help. Hokey? Maybe but there is no shame in asking when you need it. The only thing that I need to remember is to ask for very specific things otherwise you may regret what you asked for. And as I mentioned, my writing has been so much less than the amount that I used to write and that bothers me. I asked for help- I asked for motivation to write. She told me that there had been a shooting at a school nearby and the rumor was that the shooter was planning on going to two more schools as well. This was followed by an automated message from the school claiming there was an "incident" and that it was under control. Then another text from my daughter stating her school may be going into lockdown. I told her I was coming to get her, she told me not to. My mind went into overdrive and I did not care if I was overreacting; I am a parent, I protect my children. </p><p>When I got to her school, a handful of parents were already trying to sign their children out and discussing what they had heard about the shooting. Then a parent claimed there was an incident at another school (just as my daughter had told me was rumored to be happening) and they began to lock the school doors in front of us, telling is to leave. Parents began to argue, they wanted to be with their children, they were already signed out, how could they just leave?! There were Sheriff Office team members there telling us they could not do anything, that we had to leave. In the midst of this, my mother called me and asked "Do you have her?" I began to cry and loudly ramble "They are locking the doors, they won't let her out and they won't let me in. I can't leave her." My mother couldn't understand me. I got louder and began cursing at the men at the door "Are you effing kidding me? I'm not leaving without my daughter! If you can't let her out, then let me in!" They would not open the doors. More parents began to get loud too and words were flying out of my mouth as I had this horrible memory of a very heart-wrenching film that I watched with my daughter called <a href="https://www.netflix.com/title/81349306" target="_blank">If Anything Happens I Love You</a>. (If you have not seen it, you must but be prepared as it will literally make you sob). I essentially became the mom in the well known scene in <a href="https://www.youtube.com/watch?v=plqzeUB9B-w" target="_blank">Terms of Endearment</a> and I just kept repeating the same thing "Are you effing kidding me! Let me be with my daughter! I'm not leaving her here!" </p><p>For those of you too young to know what I am talking about, this is pretty much how I felt I must have looked like outside of the school (thank you school administrators and local sheriff for not arresting me)</p><div class="separator" style="clear: both; text-align: center;"><iframe allowfullscreen="" class="BLOG_video_class" height="266" src="https://www.youtube.com/embed/plqzeUB9B-w" width="320" youtube-src-id="plqzeUB9B-w"></iframe></div><br /><p>Then, they grew a heart. They rushed us in quickly and told us where to stay and not to move. I posted on my <a href="https://www.instagram.com/tracybnutrimom/" target="_blank">Instagram</a> page asking for prayers... I didn't know what would happen and I needed to stay in touch with other people to try to stay sane. I was contacted by Christopher Eberhart, a writer for Daily Mail.com who began asking me where I was, the situation, how everything was going. And although it may have seemed like odd timing to communicate with a journalist, his messages were also keeping me informed from outside of the situation, which calmed me. I want to thank him for unknowingly keeping me calm and <a href="https://www.dailymail.co.uk/news/article-9948265/North-Carolina-high-school-lock-police-search-reported-gunman-campus.html?fbclid=IwAR2RqmSlXUwM-qXU8NJRe19WYs4hd6ISZm4xga07x6wrAbg_ItP0qTb5XjI" target="_blank">informed</a> so that I didn't panic as much as I could have. I had minimal contact with my daughter but she said she was ok and I watched as the school administrator kept checking to make sure the doors were locked. </p><p></p><p style="clear: both; text-align: left;">In between, there was whispering and phones pinging with notifications. Then group huddles with school staff and police. After two hours, it was deemed safe to begin to let the children out. I was instructed to have my daughter meet me at my car. In the middle of the mad rush for everyone to leave abruptly, I waited for her to appear. I still had a fear as I watched all of these people pouring out of school and held my breath, hoping there was no shooter in the area. I made her hug me in the parking lot of the high school, in front of her friends and the traffic and everything else going on. Because at that moment, nothing else mattered. <b><span style="color: #2b00fe;">Nothing</span></b>. Not the little stupid things I was worrying about, not whatever may have not gone my way recently- nothing. Just hugging my child. </p><p></p><p>This could have been so much worse for my child. It could have been so much worse for the other school students. It could have been my child shot. It wasn't and I am so very, very thankful that it was not. Perspective- today, my life was put into perspective.</p><p>I am saddened to share that the child who was shot passed away today. The problem is, many people eat a food and something happens and then they stop eating it. Because within the food allergy community, there is a somewhat silent argument between food allergies and food intolerances. Many argue that a food intolerance is not the same as a food allergy because it (most likely) does not cause an anaphylactic reaction. There have been battles over this for years. I stick to what I originally said years ago-<b><i> just because a food intolerance is not life threatening does not mean it is not life altering.</i></b> I applaud Dr. Ruchi for stepping up to the plate and advocating for <i>all</i> of those who are having difficulties with their foods. Research shows that parents of food allergic children have a higher stress rate, which includes increased marital stresses. Obviously, this also means increased chances of divorce for those parents. Divorce is never something that enters your mind when you get married and neither does the thought of your food allergic child deciding to remain with the parent that was less proactive in their allergy protection. I am in no way saying that there aren't families that don't have both parents remaining active in their child's allergies but it is the case for some. I was the primary caretaker of both of our children. Every doctor's visit, every school activity, every party and everything where food was or may be involved, I was there. I did this willingly and with love and I would do it again in a heartbeat. As any parent does, I made sure my child was as safe as possible. In our family's case, my son's food allergies did not leave room for me to work a typical full time job as my husband did. I feel this caused one of the areas of disagreement within our marriage but in my opinion, it was what was needed for our son's safety. I worked part time jobs when I could. And just because it was not as much as my husband did, this does not mean that I did not work at all (let me remind everyone that being a mom is equivalent of 2.5 full-time jobs as per the <a href="https://nypost.com/2018/03/17/being-a-mom-is-the-equivalent-of-2-5-full-time-jobs/" target="_blank">New York Post</a>). So many of us have just had a crap year in ways beyond how our brain could have ever imagined. Life has changed us all forever. For me, the things that have pushed me down have made me wake up every single day trying to do better, trying to stand taller and trying to figure out how to get back some of what has been taken from me. </p><p>The title says it all- This year has sucked the life out of me. But in the same breath, I continue to inhale even deeper. Shifting energy is necessary and it doesn't mean it's forever, unless you decide it should be. Writing has been such a creative outlet for me for most of my life but this year, it has been something that my mind just has whispered <i>It will come back in time, relax</i>. This being said, anyone who knows me truly knows that I am not a sit back and wait kind of person.... so, this is ultra frustrating. What has worked for you before but isn't working now? 2020 has given us a new perspective at how to handle our emotions as well as our day to day lives. It truly is survival of the fittest. This does not mean that you are alone. It just means that you can ask for help when you need it- nobody has everything under control all of the time. So, please, ask because it is that simple.</p><p><b>Continue to Be Yourself </b>I pride myself on this and I promise you, I am the person you think I am if we ever meet. I see no point in being someone that I am not. With the multitude of things that I have journeyed through the past few years, I am here to say that being yourself is empowering. It doesn't matter if it doesn't make other people happy, it doesn't matter if your happiness is not what was expected of you and it doesn't matter that your chosen path isn't what anyone else thought you should be doing. Be yourself. Own it with all of your being and soul. Feel everything the way that you want to feel it now. Life is short and there is never enough chocolate (unless Enjoy Life Foods FINALLY makes a Big Bar). Think about it- how many people remember you for all of the things that you were not?</p><p><b>What Makes YOU Happy? </b>For me, writing and food has always been a part of my life in some form. I have always loved working with products and organizations but creating recipes has been a very interesting way to watch my brain unfold. (just a heads up- they are full of a very snarky, dry sense of humor so if it's not your cup of tea, bygones)</p><p>There was a saying I saw recently that really sums up where I have landed and how I feel and I'm sharing because I want so much for all of you to feel the same. It reads "<i>Don't save me for later, I won't be there</i>". I'm not sure if it was my life events or the pandemic or a self awakening but this speaks to me on so many levels. This is all sounding so sappy I am sure but I wanted to write something that was not my normal post. I wanted to say that remembering yourself and finding yourself again is so very important. Be confident in who and what you are and what you offer, no matter how big or how small because it's what your importance is. I cook and bake a lot so when I find products that let me just eat and not have to cook, I am SOOOO happy. Slight citrus accents mixed with a just a tad of garlic and lemongrass which you typically don't find in a beef jerky treat. Loving the outside of the box flavor thinking Prevail! One of my BIGGEST fears as a food allergy parent has always been THIS scenario- a time when there may not be enough safe foods for my child and others. The first article that I ever read waaaaay back when NutriSon was young made me cry- it was about a woman whose child had Celiac. They were in need and went to the local food pantry for most of their food items. They can be too gummy, fall apart way too easily, are not flexible or just don't taste very good. If you follow me, you know that I don't sugarcoat anything. There is no reason too. Even with food allergies, intolerances and/or dietary restrictions, you should enjoy the foods that you eat.<br />

Which is what brings me to my next point- my review of <a href="https://www.kaliwonder.com/" target="_blank">Kaliwonder</a> Gluten Free Slim Wraps. Before I jump into it, I did not look at the fact that these wraps have less carbs. I eat what I want to eat. If I want a carb, I'm going to eat a carb. Is it helpful for some- yes, go for it! But I did want to make that initial point. Back to my review- Kaliwonder sent me their oat wraps. Here a a few positives:<br />

<b><span style="color: #660000;">Do I get too wrapped up in taste?</span></b> Yes. I am allowed to and so are you! I was pleasantly surprised from the moment that I opened up the bag. Because Slim Wraps have seasoning, opening the bag immediately made me think of... pizza? I mean, when was the last time you opened up a bag of gluten free wraps and actually liked the smell of the wraps? Probably never (again, just being honest). So, of course, I was immediately excited to try them out. But first, I had to continue my food detective process. First up was the typical wrap for lunch (sorry, no exciting recipe but I was hungry and excited about tasting them after smelling them!). The final verdict- Slim Wraps are <i>not</i> dry, crumbly, mushy and did <i>not</i> fall apart!!!!! Come on gluten free friends, we all know this is a huge victory all by itself. Another plus- there was no funky aftertaste. Happy taste buds, happy blogger indeed.</div>

I decided to try Slim Wraps as a quesadilla to test out the same judgments and see if it continued to stand up. IT DID! One thing I did note is that Slim Wraps didn't seem to want to get crispy when I panfried them. Not the worst thing in the world but I personally prefer a crispy, crunchy quesadilla. In the grand scheme of things I will take the gluten free, tasty not-fall-apart-not-mush-smells-good wrap while cooking. I am definitely willing to try out a few more recipes that require the Slim Wraps to be cooked for more options. All in all- I love the fact that these wraps are gluten free, tasty and can be packed into a lunch without turning inedible or unreliable. Once school comes back into full swing, having another packable option is key. Actually, any reason to eat is a good reason so basically, I am just excited to try them out again.</div>

Are you one of those people who used to eat certain foods but you can't anymore? Growing up, one of my favorite Saturday morning breakfast foods were Bisquick drop biscuits with butter. The fluffy yet slightly crunchy biscuits... my mouth is watering right now. This doesn't happen when you try to make them with gluten free options, it just doesn't. Yes, I can make biscuits but nothing has even come close to these... le sigh.<br />

Not only did I get a bunch of options and ideas, I also received a message from Kalo Foods telling me about their bake and eat <a href="https://kalofoods.com/shop?olsPage=products%2Fbuttermilk-biscuits" target="_blank">Gluten Free Buttermilk Biscuits</a> ..... wait, what?!! NOT a recipe that I can potentially mess up, an actual pre-made item that I just bake??? OK, this was something I knew I had to try! They do contain dairy but they are free of many other allergens (egg, nut, etc.) Of course, I highly recommend that you visit their <a href="https://kalofoods.com/" target="_blank">website</a> to ensure their products are safe for your allergy needs but wow, this option is one of my must-have wish list items!<br />

I know I am repeating myself but the fact that I just bake and eat was like heaven, truly. In my opinion, they bake up similar to a biscuit that you might have at a place such as KFC (yes, I hate that I am using this as a point of reference but...) as well as Pillsbury biscuits (yeah, those pop open packages that, again, I normally don't mention or endorse). Texturewise, they were not dry or crumbly simply a decent biscuit that you can slice in half and slather with whatever topping of your choosing. They were excellent for sopping up dishes, if you are one who does that, and they are an easy product to use as a fast meal edition, especially since they do not contain gluten or egg (again, research to be safe at <a href="https://kalofoods.com/" target="_blank">Kalo Foods</a> because I love all of you and want you to eat safely). Being the product detective that I am, I also tested them out in a few other areas:<br />
<ul>
<li><b><span style="color: #38761d;">Thawed on the counter</span></b> Rather than taking them from the freezer, I left a few out to thaw. When I baked them, I placed them on a baking rack to allow more air circulation. They baked in approximately 14 minutes but I noticed using the baking rack made them a little less fluffy.</li>
<li><b><span style="color: #38761d;">Thawed in the fridge</span></b> I left a few biscuits in the refrigerator overnight to thaw as well. I baked these directly on a baking sheet. Findings- they were slightly poofier when baked directly on the baking sheet but the middle of the biscuits remained mushier, which disappeared if I let them sit for a few minutes after baking versus cutting them open right away.</li>
<li><span style="color: #38761d;"><b>Reheating previously cooked</b> </span>This was for all of you needing to know if they can also be leftovers and the answer is- yes! I heated the oven to 375 degrees, cut them in half (yes, I tried reheating them whole, not so well) and in 10-15 minutes, you still have the same biscuit! </li>
<li>I<span style="color: #38761d;"> <b>DO NOT</b></span> recommend microwaving them. It's an ok option in a pinch but I am picky about the consistency of my biscuits and I prefer having them as close to the original texture as possible. Microwaving them may cause them to become gummy.</li>

I have been missing easy to make gluten free cinnamon rolls. I have tried making them from scratch, I have failed and this option is so easy, you will be as happy as I am. By simply repurposing the "dough", I created this recipe for others that find it challenging to make a completely homemade cinnamon roll dough. I have tried it, my cinnamon roll dough did not come out like it was supposed too, my cinnamon rolls did not taste good and it caused me to feel defeated in my own kitchen, which is what I try not to feel or make others feel, ever. </div>

As much as I love that my children are growing up and becoming their own person, I do miss the nights that I would snuggle and read with them. Now, with my son being 18 and my daughter 15, well.... it may creep some people out and mortify both of my kids if I were to try to read to them. Luckily, I still get approached to give my thoughts about new books. So, although I cannot read them to my children, I get to share them with all of you and your children and that leaves me with warm, fuzzy feelings.<br />

The main character, Elvie, is a dinosaur who cannot stop sneezing. The pictures and wording are a simple way to read to children on a comforting level while allowing them to enjoy a family-friendly story. Although just thirteen pages long, this story of a sneezy dinosaur would be a wonderful way to softly educate families, be used for story time at school or as an easy way to help transition into the world of allergies. Studies have shown that visual reminders are an easier way to educate anyone but children especially tend to pick up on messages more quickly when they find the character someone that they can relate to easily.<br />
